{"id":244,"date":"2013-12-31T18:03:13","date_gmt":"2013-12-31T18:03:13","guid":{"rendered":"http:\/\/eatingcardinals.com\/?p=244"},"modified":"2013-12-31T18:03:13","modified_gmt":"2013-12-31T18:03:13","slug":"white-chicken-chili","status":"publish","type":"post","link":"http:\/\/eatingcardinals.com\/?p=244","title":{"rendered":"White Chicken Chili"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/eatingcardinals.com\/wp-content\/uploads\/2013\/12\/chi.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-245\" alt=\"chi\" src=\"http:\/\/eatingcardinals.com\/wp-content\/uploads\/2013\/12\/chi.jpg\" width=\"300\" height=\"300\" srcset=\"http:\/\/eatingcardinals.com\/wp-content\/uploads\/2013\/12\/chi.jpg 300w, http:\/\/eatingcardinals.com\/wp-content\/uploads\/2013\/12\/chi-150x150.jpg 150w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><strong>White Chicken Chili<\/strong><\/p>\n<p>&nbsp;<\/p>\n<p>2 c diced onions<br \/>\n2 c diced celery<br \/>\n5 cloves garlic, chopped<br \/>\n1\/2 c vegetable oil<br \/>\n2 pounds frozen chicken breast, cooked and diced<br \/>\n5 c water<br \/>\n1 bay leaf<br \/>\n2 4oz cans diced green chilies<br \/>\n2 4 oz cans diced jalape\u00f1os<br \/>\n1\/2 tsp oregano<br \/>\n1\/2 tsp cumin<br \/>\n1\/2 tsp dry mustard<br \/>\n1\/2 tsp basil<br \/>\n1\/2 tsp Old Bay seasoning<br \/>\n1\/4 tsp Cajun seasoning<br \/>\n1\/2 7 oz can can chipotle in adobo, chopped<br \/>\n4 tbsp chicken base<br \/>\n2 pickled jalape\u00f1o, chopped<br \/>\n2 cans white (northern) beans, drained and mashed with immersion blender (I do this because I don&#8217;t like beans, but it also makes the chili thicker. Without mashing beans, it&#8217;s thinner like soup.)<br \/>\n1 additional can white beans, drained (optional) &#8211; I add a can of whole beans if I&#8217;m making this for others who like beans<br \/>\n1\/2 c heavy cream<br \/>\nSour cream<\/p>\n<p>Saut\u00e9 onion, celery, and garlic in oil until tender, about 5 minutes. In a large stockpot, add chicken, water, bay leaf, chilies, jalape\u00f1o, oregano, cumin, dry mustard, basil, Old Bay, Cajun seasoning, chipotle, chicken base, pickled jalape\u00f1o and beans and simmer for 1 1\/2 hours.
